Dr. Fuhrman’s Cabbage Salad

The combination of greens, seeds and currants will fill you up and keep you full all afternoon. Eat this a couple of times a week and you’ll be craving greens in no time!

Serves: 4

Dietary guidance: v 


2 c green cabbage, grated
1 c red cabbage, grated
1 c savoy cabbage, grated
1 carrot, peeled and grated
1 red pepper, thinly sliced
1/4 c dried currants
2 tbsp raw pumpkin seeds
2 tbsp raw sunflower seeds
1 tbsp unhulled sesame seeds


1/3 c soy, almond milk
1 apple, peeled and sliced
1/2 c raw cashews or 1/4 c raw cashew butter
1 tbsp balsamic vinegar
1 tbsp dried currants
1 tbsp unhulled sesame seeds, lightly toasted
blend soy milk, apple, cashews and vinegar and toss with salad.
Garnish with currants and lightly toasted sesame seeds.
