Chicken Pesto Sandwiches

Difficulty: Easy - for beginners


1 (8-ounce) package cream cheese, softened
1/4 cup plain yogurt
1/3 cup pesto
1/4 cup grated Parmesan cheese
2 cups chopped cooked chicken
1 red bell pepper, chopped
10 slices whole wheat bread OR 5 whole wheat sandwich buns
3 tablespoons butter, softened


In medium bowl, combine cream cheese, yogurt, and pesto

Beat until smooth.

Stir in cheese, then add chicken and red bell peppers.

Spread one side of each slice of bread or rolls with the softened butter. Make sandwiches with the bread, buttered side in, and the filling.

Serve immediately, or chill for 4 hours, or wrap and freeze.

If you aren't going to freeze them, you can add the lettuce. If freezing the sandwiches, omit the lettuce for now.

If frozen, let thaw in an insulated lunchbox with a frozen gel pack.
