nonstick cooking spray
1/2 small yellow onion
1 stalk celery, chopped
8 oz pasteurized lump crab meat
2 Tbs mayonnaise
2 Tbs Panko bread crumbs
1 Tbs Dijon mustard
1 tsp Canjun seasoning blend
1/4 c cocktail sauce
Spray a large nonstick skillet with cooking spray. Set over medium heat, add onion and celery. Cook, stirring often, until softened, about 3 minutes. Transfer to a large bowl, let cool for 5 minutes.
Add the crabmeat, mayonnaise, bread crumbs, mustard, and spices. Stir gently to create a uniform mixture. Divide into four even amounts and form into cakes.
Spray the skillet again with nonstick spray. Set over medium heat for 1 minute. Add the crabcakes and cook until brown (about 8 minutes), turning once.
Serve each cake with 1 Tbs cocktail sauce.
