Difficulty: Easy - for beginners
1 lb veal, thinly sliced
1/4 c grated parmesan cheese
2 Tbs flour
1 can (4 oz) sliced mushrooms, drained
1/4 c butter
1 can condensed beef broth
2 Tbs marsala
cooked noodles or rice
Cut veal into two or three inch pieces.
Mix together cheese, flour, and pepper. Pound into veal with meat hammer or edge of heavy saucer.
Brown veal, then mushrooms in butter. Blend in any remaining flour and cheese.
Add beef broth and wine.
Cover. Cook over low heat 30 minutes or until meat is tender. Stir often.
Uncover. Cook until sauce is desired consistency.
Serve over noodles or rice.
