at least 6 cups vegetable stock
1 cup red lentils
5 large carrots, chopped
1 small onion
2 cloves of garlic, peeled and roughly chopped
1 tsp garam masala or curry powder
1-2 tbsps of olive oil
Heat olive oil in large saucepan and fry garlic and onion until soft.
Add the rest of the ingredients and stir well. Cover and simmer 20-25 minutes until lentils and carrots are soft. Add water if necessary.
Pour all of soup into a blender, or half for a chunkier texture, and blend until smooth.
