Pineapple Unfried Rice

A great rice dish, the pinapple makes it a little sweet

Ingredients

1 Red Pepper Diced
1 bunch scallions cut long way in slices
6 oz pea pods cut up
4 cups cooked rice
1 large can pineapple with juice
1/2 cup low sodium soy sauce

Method

Drain pineapple, reserve pineapple and place juice in large pan on stove.
Heat pineapple juice over medum heat, add scallions and red pepper, cook for 2-3 minutes
add pea pods and cooked rice heat through for 2-3 minutes
add soy sauce and pineapple, warm for 1-2 minutes
serve
