1 cup milk or soy milk
1 tablespoon vinegar
2 cups cornmeal
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
corn kernels, whole or pureed
applesauce (or fresh pureed apples)
oil or better
Mix dry ingredients well.
Mix vinegar with milk.
Add corn and applesauce to the milk mixture.
Pour the wet ingredients into the dry well and combine until barely mixed.
Pour into a greased baking pan.
Cook at 420 degrees F for about 25 minutes.
Let cool 15 minutes before cutting.
