6 cups chopped zucchini/squash
1 portabella mushroom
3 green onions
6 basil leaves
4 cloves of garlic
2 tablespoons olive oil
2 tablespoons balsamic vinegar
salt and pepper
Chop aucchini/squash, tomatoes, portabella mushrooms, green onions, garlic and mix with basil leaves.
Add olive oil, balsamic vinegar, salt and pepper.
Place in 8x13 baking dish and bake at 450 for 25 minutes.
Serve over brown rice or whole wheat pasta.
