2lb lean ground beef
1 medium onion.
whole head of garlic
1.5 C breadcrumbs
1T each rosemary, oregano, salt, pepper thyme
dice bacon, onions & sautee until onions are soft, then add finely diced mushrooms & continue until cooked & onions approach blackened. Add garlic last, coarsely chopped and cook just a moment more.
Mix all that with eggs, breadcrumbs & meat, make your favorite size and cook 350 for 45 (large) or 35 (small) meatballs. I made big ones & fit them all on one large cookie sheet, barely.
