Turkey Spinach Crumble

Ingredients

1lb organic turkey breast, cooked and chopped
2 cups baby spinach
5 basil leaves
4 garlic cloves
1/2 yellow onion, coarsely chopped

pepper to taste

2 eggs
2 egg white

Method

1. Place the first 7 ingredients in a blender and chop until large crumbles appear
2. Using pam spray, on a medium heat skillet, lightly cook crumble and remove from heat
3. Lightly beat the eggs and start cooking your omelette
4. Add your turkey spinach crumble and close your omelette and finish cooking.
