1 tablespoon oil
½ cup sweet and sour sauce or duck sauce
1 pound boneless skinless chicken
1 cup water breasts, cut into bite-sized pieces
2 cups brown rice, uncooked
2 cups frozen stir-fry vegetables
1 can pineapple chunks in juice
Cook chicken through with oil in skillet. Add vegetables, pineapple, with juice and sweet and sour sausce; mix well. Stir in water and bring to boil. Stir in rice; cover. Reduce heat to medium low and simmer 5 minutes. Remove from heat and let stand 5 minutes or until almost all the liquid is absorbed and rice is tender.
