â€¢6 large sweet potatoes
â€¢3 tablespoons butter
â€¢1 can (8 ounces) unsweetened crushed pineapple, undrained
â€¢1/2 cup dried cranberries, divided
â€¢1/3 cup orange juice
â€¢3/4 teaspoon salt
â€¢2/3 cup miniature marshmallows
â€¢1/3 cup chopped pecans
â€¢Scrub and pierce sweet potatoes. Bake at 400° for 45-55 minutes or until tender.
â€¢ Cut potatoes in half; scoop out pulp and place in a large bowl. Stir in butter until melted. Stir in the pineapple, 1/4 cup cranberries, orange juice and salt.
â€¢ Transfer to an 11-in. x 7-in. baking dish coated with cooking spray. Cover and bake at 350° for 30 minutes.
â€¢ Uncover; sprinkle with marshmallows, pecans and remaining cranberries. Bake 8-10 minutes longer or just until marshmallows are puffed and lightly browned. Yield: 12 servings.
