â€¢2 pounds red potatoes, quartered
â€¢1 cup (8 ounces) sour cream
â€¢2 tablespoons minced fresh parsley
â€¢1 teaspoon salt
â€¢1/2 teaspoon garlic powder
â€¢1/2 teaspoon pepper
â€¢Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender.
â€¢ Drain and transfer to a large bowl. Add the remaining ingredients; mash until blended. Yield: 5 servings.
