â€¢1-1/2 cups Smucker's® Apricot Preserves
â€¢1/2 cup water
â€¢2 tsps. lemon juice
â€¢1/2 tsp. salt
â€¢1/2 tsp. ground nutmeg
â€¢1/4 tsp. ground cinnamon
â€¢4 large sweet potatoes, peeled and cut lengthwise into eight wedges
â€¢Heat oven to 400°F. Combine preserves and water in heavy saucepan. Bring mixture to a boil over medium high heat; reduce heat and simmer 5 minutes, stirring constantly. Remove mixture from heat and stir in lemon juice, salt, nutmeg and cinnamon.
â€¢ Arrange sweet potatoes in a baking pan. Using a pastry brush, baste potatoes thoroughly with sauce, using about half the sauce. Bake about 40 minutes, or until tender, basting with remaining sauce about halfway through cooking time. Yield: 8 servings.
