Serves: 6 servings
â€¢1/4 cup butter, melted
â€¢1 envelope Italian salad dressing mix
â€¢2 tablespoons lemon juice
â€¢1 roasting chicken (6 to 7 pounds)
â€¢2 teaspoons dried oregano
â€¢In a small bowl, combine the butter, salad dressing mix and lemon juice. Place chicken on a rack in an ungreased roasting pan. Spoon butter mixture over chicken.
â€¢ Cover and bake at 350° for 45 minutes. Uncover; sprinkle with oregano. Bake, uncovered, for 1-1/2 to 1-3/4 hours or until a thermometer reads 180°. Yield: 6 servings.
