â€¢1/2 cup lump crabmeat, drained
â€¢2 tablespoons shredded Parmesan cheese
â€¢1 tablespoon chopped green onion
â€¢1 teaspoon butter, melted
â€¢2 beef tenderloin steaks (6 ounces each)
â€¢1/4 teaspoon salt
â€¢1/8 teaspoon pepper
â€¢In a small bowl, combine the crabmeat, cheese, onion and butter.
â€¢Sprinkle steaks with salt and pepper. Cut a horizontal slit through each steak to within 1/2 in. of the opposite side, forming a pocket. Fill with 1/2 cup crab mixture. Secure with kitchen string if necessary.
â€¢ Broil 4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°; well-done, 170°). Let stand for 5 minutes before serving. Yield: 2 servings.
