Date Nut Bread

Serves: 2 loafs (14 slices each)


1/4 cup shortening
1-1/2 cups sugar
2 eggs
1-1/2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1-1/2 cups orange juice
1-1/2 cups chopped dates
1/2 cup chopped walnuts


In a mixing bowl, cream shortening and sugar. Add eggs and vanilla; beat until fluffy. Combine dry ingredients; add alternately to creamed mixture with orange juice. Blend well. Fold in dates and walnuts. Pour into two 8-inch x 4-inch x 2-inch loaf pans coated with nonstick cooking spray. Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool in pans 10 minutes before removing to a wire rack.
