Best-Ever Breadsticks

3/4 cup skim milk
1 tablespoon sugar
1 teaspoon salt
1 tablespoon margarine
1 package (1/4 ounce) quick-rise yeast
1/4 cup warm water (110 to 115)
3 to 3-1/4 cups all-purpose flour
1 egg white
1 tablespoon water


In a saucepan, heat milk, sugar, salt and margarine. Cool to luke-warm. Dissolve yeast in warm water. Combine milk mixture, yeast and 1-1/2 cups flour; beat until smooth. Add enough remaining flour to form a stiff dough. Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with nonstick cooking spray, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes. Punch dough down. Pinch off golf ball-size pieces; roll into pencil-size strips. Place 1 inch apart on baking sheets coated with nonstick spray. Cover and let rise for 15 minutes. Beat egg white and water; brush over breadsticks. Bake at 400 for 10 minutes or until golden brown.
