Chicken Burgers

Serves: 8 sandwiches


1/2 cup chopped onion
1-1/2 pounds cooked chicken breast, ground or finely chopped
1-1/2 cups dry bread crumbs
1/2 cup grated parmesan cheese
Egg substitute to equivalent to 3 eggs
2 tablespoons dried parsley flakes
1 teaspoon each poultry seasoning dried thyme and ground mustard
1/2 teaspoon rubbed sage
1/2 teaspoon pepper
3/4 cup skim milk
2 teaspoon cooking oil
8 hamburger buns, split
lettuce leaves and sliced tomatoes


In a large skillet coated with nonstick cooking spray, saute onions until tender. Place in a large bowl. Add chicken, crumbs, Parmesan, egg substitute, herbs and seasonings; mix well. Stir in milk. Shape into eight patties. In the same skillet, cook patties in oil for 5 minutes or until browned on each side and heated through. Serve on buns with lettuce and tomatoes.
