1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp sea salt
1/4 cup softened butter
3 tbl Blood Orange Olive Oil
1 cup sugar
1/4 cup Pumpkin Spice Balsamic Vinegar
1 cup canned pumpkin puree
1 tsp vanilla extract
Preheat oven to 350 degrees
Combine flour, baking powder and soda, and all spices and salt. Set aside.
In a medium bowl, mix olive oil, softened butter, and sugar until thoroughly mixed and creamy. Add pumpkin, egg, vanilla and beat until creamy.
Add in dry ingredients in 3rds; mixing well after each addition. It is best to use a spoon or spatula rather than a mixer to avoid over-mixing.
Drop by tablespoons onto a greased cookie sheet and flatten slightly.
Bake for 15-20 minutes depending on size and thickness. Remove when slightly browned.
