Water, vegetable stock or soy milk
7 oz. Soft tofu, 1 Tbsp. pumpkin seeds, sunflower seeds, or cashews optional
Other vegetables you have on hand
Some cubed tofu, optional
Combine pumpkin, liquid, garam masala and tofu, seeds or nuts, if using, in blender. Blend until smooth.
Heat olive oil in saucepan. Add onion and garlic. Cook until soft.
Add pumpkin mixture.
Add potatoes and other vegetables. Stir.
Bring to a boil. Lower heat and simmer until soft, stirring occasionally.
If using tofu, add after all other ingredients are cooked, and just heat through.
