Laurie Stoker's breakfast potato casserole

Ingredients

2 lb frozen hashbrown/diced potatoes
1 med onion, chopped, sauteed
1-2 C sour cream
1 can cream of chicken soup
2 C shredded cheddar
salt/pepper

Method

blend ingredients then fold into potatoes and sauteed onion
melt 2 T butter, pour over potato mix
cover, bake @350 for 1-1.5h, should bubble around edges
uncover for last 15-20 min to brown top
