250g linguine
4tbs olive oil
10 green prawns, peeled & deveined, tails intact
sea salt
freshly ground pepper
2 cloves garlic, crushed
2 small red chillies, finely chopped
25g butter
50g baby rocket, washed & dried
TO SERVE:
a few extra rocket leaves
1. Cook linguine in rapidly boiling salted water according to packet instructions.
2. Heat oil in a large non-stick frypan over medium heat. Add prawns, season with salt & pepper and cook for 1min. Add garlic & chillies and cook for another minute.
3. Add butter & reduce heat to low. Add the rocket & cooked linguine. Toss linguine through the sauce until coated.
4. TO SERVE: divide the pasta between two bowls & decorate with extra rocket leaves & a wedge of lemon.
