Cornmeal Waffles

1 egg, well beaten
3/4 c. melted shortening
1 1/2 c. milk
1 1/2 c. cornmeal
1/2 c. flour
3 Tbsp baking powder
1/2 tsp. salt
1 Tbsp sugar


Combine egg, shortening, milk, and cornmeal. Sift flour with baking powder, salt, and sugar. Add to first mixture. Beat until smooth. Batter should pour; if necessary, use a little more milk.

Bake in hot waffle iron. Leftover batter may be kept in refrigerator and used next day.
