1 Chinese roast duck
6 spring onions, sliced on the diagonal
2 Lebanese cucumbers, julienned
30g coriander leaves
1 large red chilli, finely sliced
TO SERVE: dressing
2 & 1/2tbs hoisin sauce
2tbs soy sauce
1tbs balsamic vinegar
2tsp sesame oil
1. Pull the skin & meat from the duck with your fingers, roughly shredding the skin.
2. Place the duck, spring onions, cucumber, coriander & chilli in a bowl and toss to combine.
3. Drizzle over the dressing just before serving with steamed rice, or serve alongside.
Place all ingredients in a bowl & stir to combine.
