Chewy Cream Cheese Brownies

•4 ounces unsweetened chocolate, chopped
•1/2 cup butter, cubed
•4 eggs
•2 cups sugar
•2 teaspoons vanilla extract
•1-1/2 cups all-purpose flour
•1 cup chopped nuts, optional

•2 packages (8 ounces each) cream cheese, softened
•1/2 cup sugar
•1 egg
•2 teaspoons vanilla extract


•In a microwave, melt chocolate and butter; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in vanilla and chocolate mixture. Gradually add flour to chocolate mixture (batter will be thick). Stir in nuts if desired.
• Spread half of the batter evenly into a greased 13-in. x 9-in. baking pan; set aside.
• In a small bowl, beat the filling ingredients until blended. Gently spread over batter. Spoon remaining batter over filling; spread to cover.
• Bake at 350° for 45-50 minutes or until filling is set. Cool on a wire rack for 1 hour.
• Refrigerate for at least 2 hours. Cut into bars. Refrigerate leftovers. Yield: 4 dozen.
