4 boneless, skinless chicken breasts
1 red chilli, seeded & finely chopped
2 garlic cloves, crushed
1tbs grated fresh ginger
4tbs runny honey
2tbs soy sauce
4tbs lime juice
1 spring onion, diagonally sliced
1 red chilli, seeded & finely sliced
1tbs fresh mint leaves
1tbs fresh coriander leaves
1. Cut each chicken breast lengthwise into 3 strips.
2. Combine chilli, garlic, ginger, honey, soy sauce & lime juice. Reserve 4tbs mixture. Add chicken to remaining mixture & toss to coat evenly. Cover & refrigerate for 30mins.
3. Thread 3 chicken strips onto each skewer. Grill about 8-10mins. Drizzle over reserved sweet chilli mixture.
4. Sprinkle with spring onion, chilli, mint & coriander leaves. Serve hot.
