Tortellini Boscaiola

This is my favourite creamy pasta dish!

Preparation time: 15mins
Cooking time: 25mins

Serves: 4-6


30g butter
4 rashers bacon, chopped
2 cloves garlic, crushed
1 small leek, thinly sliced
300g button mushrooms, sliced
60ml dry white wine
375ml cream
1tsp chopped fresh thyme
500g fresh veal tortellini
50g grated parmesan
1tbs chopped fresh parsley


1. Melt butter in a large frying pan, add the bacon & cook over medium heat for 5mins or until crisp.

2. Add garlic & leek and cook for 2mins, then add the mushrooms and cook for 8mins, or until softened.

3. Add the wine, cream & thyme, bring to the boil, then reduce the heat & simmer for 10mins, or until the sauce has thickened.

4. Meanwhile, cook the tortellini in a large saucepan of lightly salted boiling water until al dente. Drain.

5. Add the parmesan to the sauce & stir over low heat until melted. Season. Combine the sauce with the tortellini & parsley.
