Janet's Chicken -n Rice

A family favorite chicken soup cooked with white rice.

Preparation time: 20
Cooking time: 2-hrs

Difficulty: Easy - for beginners
Serves: 5-6


2-3lb whole fryer chicken cut up or whole(head and toes removed)
10 cups water
1-small yellow onion diced. about 1/2-cup
2-tsp salt
1/2 tsp thyme crushed
6 peppercorns or 1/4 tsp black pepper
1 cup celery diced
1 cup carrots diced or use a 1/2 bag of mixed veggies.
1 cup of white rice (rinsed and uncooked)


Follow exactly.
In a dutch oven or in a tall pot. combine chicken and water and bring to a boil. Skim off chicken fat scum. Reduce heat cover and add pepper and salt simmer for 15 minutes. Remove chicken to a plate and allow to cool down some. off the burner and save the chicken broth for use later. De-bone chicken and cut into bit size pieces. Skim fat from top of the broth that has cooled. recombine chicken, veggies and rice. Bring to a boil and reduce heat. Season to taste. Cover and reduce heat to low. Simmer for 20-30 minutes. Serve hot in bowl.

Omit rice and use cooked noodles to last step.
