500g beef strips
1tbs coarsely grated lime rind
2tbs lime juice
1tbs bottled chopped lemongrass
1tbs peanut oil
1 x 140ml can coconut cream
1tbs fish sauce (optional)
1/3 cup roughly chopped fresh coriander leaves
4 spring onions, thinly sliced
steamed rice to serve
lime wedges to garnish
1. Combine beef strips, rind, juice & lemongrass in a bowl; mix well. Cover; refrigerate for 30mins.
2. Heat peanut oil in a wok. Add beef in batches, stirfry until browned all over & tender.
3. Return all of the beef to wok with coconut cream & fish sauce; cook, stirring until sauce is slightly thickened. Stir in coriander leaves & onions.
4. Serve with steamed rice, garnish with lime wedges.
