Difficulty: Easy - for beginners
2 large boneless chicken breasts
1 tbsp peeled and crushed ginger
2 teaspoons olive oil
4 tbsp lime juice
3 tbsp fresh cilantro
5 cups of fresh greens (anything except iceberg lettuce)
2 peaches peeled and sliced
1 avocado peeled and sliced
2 tablespoons diced red onion and slices
Sea salt and pepper
Sprinkle salt and pepper on the chicken and bake the chicken at 350°F until cooked through but still moist (about 30 to 40 minutes). Remove from oven and cut into chunks. You may cook the chicken one day in advance.
In a separate bowl, mix together the ginger, olive oil, lime juice, cilantro. Toss in the greens to cover with the dressing.
Next, divide the greens between four plates and arrange one quarter of each of the avocado, peach and chicken between four plates. Top with the onion and season with salt and pepper to taste.
