Erin’s Chili (Vegetarian or Turkey)

Ingredients

1 onion chopped
1 green pepper chopped
4 ounces sliced mushrooms
1/2 pound tofu (or ground turkey)
3 tbsp molasses
1 tbsp apple cider vinegar
1 tsp basil
1 tsp oregano
1/4 tsp nutmeg
Salt and pepper to taste
3 tbsp chili powder
1/2 tsp crushed chilis
1 large (100 oz) can of plum tomatoes (crushed in a blender)
3 or 4 cloves of garlic, minced
1 large can kidney beans (include the juice and beans)
1 tbsp extra virgin olive oil

Method

Sauté onions, green pepper, mushrooms, tofu (or turkey) in olive oil. When tender, add blenderized tomatoes. Add all other ingredients and heat 10-15 minutes or longer. This makes a lot of chili so you can freeze it in individual servings or it will keep in the fridge for up to five days.
