Difficulty: Easy - for beginners
2 tbsp extra virgin olive oil
1 large onion chopped
8 cups or 2 large bunches of spinach
2 or 3 cloves of garlic crushed
2 boneless chicken breasts cut into strips
2 tbsp curry powder
1 can low fat coconut milk
Brown basmati rice
Cook the brown basmati rice as directed on the package. Sauté the chopped onion and garlic in olive oil. Add the curry powder and chicken to the pan. Cook on medium heat for 5 to 10 minutes stirring frequently. Add the coconut milk and simmer for 20 more minutes.
Steam your spinach, drain and add to the chicken curry mix. Serve the mixture over the brown rice (a serving the size of your fist).
