Divinity Candy

Difficulty: Easy - for beginners


3 cups white sugar
½ cup warm water
½ cup white corn syrup
3 egg whites or ½ cup (measure to be sure)
½ teaspoon cream of tartar
½ teaspoon salt
1 teaspoon vanilla
nuts (approximately 1 cup


Combine sugar, water, and syrup in pan and bring to a boil. Cook to hard ball stage. While syrup is cooking beat the egg whites with cream of tarter and salt. Beat until just whites peak -- do not beat dry. Change egg whites to large mixer bowl. When syrup is ready, pour slowly into egg whites with mixer at a moderate speed. Continue to beat until mixture will stand in soft peaks (10 or 15 minutes). (Did 20 minutes--but all depends on temp of room and whether bowl is glass or metal.) Don't give up! Add vanilla and nuts only after candy is ready to drop. Drop by teaspoons onto waxed paper.
