1 16-oz can cling peaches
1 cup granulated sugar
2 T white vinegar
1/2 tsp salt
1 12-oz bag cranberries
1 tsp grated orange peel
1 tsp grated ginger
Drain peaches, reserving liquid. Add water to peach liquid to equal 1 cup.
Coarsely chop or cut peaches into 1/2-in dice and set aside.
Combine sugar, peach liquid, vinegar, and salt in a saucepan. Bring to boil, stirring to dissolve sugar. Add cranberries, orange peel, and ginger. Boil another 5 mins or until the cranberry skins burst. Stir occasionally. Add peaches and return to full boil.
