1T Olive Oil
2 Carrots - chopped
1/2 Onion - chopped
2 chicken breast (I used frozen)
4-6 Cups of Water + 1 Chicken Bullion Cube OR Chicken Broth
3/4 Cup DIY Bisquik
1/4 Cup Milk
Saute the Carrots and Onion in Olive Oil until the onions are transparent. Add the chicken (I didn't even thaw it) and the Water/Broth. Bring to a boil then turn down the heat, add a lid, and let simmer for about an hour.
After an hour mix your DIY Bisquik with the milk to form a dough. Drop in small spoonfuls into the simmering soup. Let the dumplings cook for about 5 minutes. Serve.
