Balsamic Cranberry Apple Relish

I had some fresh cranberries from our CSA and played around until I had this chunky delicious relish. I topped pork chops; it would be great on a turkey sandwich or on the table for Christmas with your roast turkey.

Preparation time: 5 minutes
Cooking time: 20 mintues

1 cup fresh cranberries
1/4 cup sugar (or agave or honey)
1 apple cored and cut into chunks, skin on
1/2 cup dried apricots, cut into small pieces (optional)
1 tsp cinnamon
1/2 tsp cumin
1/2 tsp black pepper
1/2 cup balsamic vinegar (I used part Cranberry and part Tangerine)


Put all ingredients except apples in a heavy saucepan; bring to a boil.
Turn heat down to medium-low and cook stirring constantly for 8 minutes.
Add apples
Continue cooking and stirring for another 8 minutes until the mixture is thick, but the apples are still chunky (not dissolved).
store covered in the refrigerator until ready to use. Bring to room temperature 1/2 hour before serving.

This is great as a side-dish for poultry or pork; spread on a sandwich; or top brie or cream cheese for an appetizer.
