Walnut Pesto and Brocolli Baked Potatoes

Potatoes, gold or russet, cleaned
Brocolli, washed

Walnut Pesto:
Fresh or thawed, frozen basil, chopped finely
Garlic clove
Olive Oil or butter


Bake potatoes at 400 degrees for an hour.
Steam the broccoli and chop into small pieces.
Sautee the garlic a few minutes in olive oil or butter until slightly browned.
Mash basil, garlic, walnuts and olive oil or butter together until it makes a smoth paste.
When potatoes are done, slice open and scoop out insides.
Mix brocolli, walnut pesto and potato insides and place back in potato.
