Almond roca

Difficulty: Easy - for beginners


2 C sugar
1 lb butter
6 T water
2 T corn syrup
2 C chopped almonds
1 pkg chocolate chips


Combine sugar, butter, water, syrup in large pot. Boil without stirring. Stir from 260-290 degrees. Add almonds, stir to 300 degrees. Pour on jelly roll sheet (rimmed cookie sheet), spread. Pour chocolate chips on top, spread with rubber spatula. Sprinkle chopped almonds on top. When cool, break into pieces.

Variation: Add almonds at the beginning to "roast."
