Ingredients

1 cup lentils
carrots, washed and chopped bite-sized
other veggies such as celery, apple, brocolli and peas, washed and chopped bite-sized
onion
garlic clove
olive oil
pepper, salt or seaweed
basil
5 cups water or vegetable broth

Method

Heat olive oil and sautee onion and garlic until soft.
Add remaining ingredients. Bring to a boil and then reduce to a simmer until lentils and vegetables are soft.
