½ pound Cherry Tomatoes, chopped in half
½ cucumber, peeled
½ cantaloupe, peeled and seeded
Pinch of salt and pepper
4 teaspoons raspberry vinaigrette
2 tsp chopped chives
1 tbsp shredded mint
Slice the cucumber in two and scoop the seeds out, using a teaspoon, then slice these pieces in half. Chop these 4 lengths into somewhat thick slices with a slight diagonal bias. Toss in a bowl with the tomatoes.
Make balls or wedges from the melon and add to the tomatoes and cucumber. Season lightly and add the remaining ingredients. Toss gently and leave in the fridge to macerate for at least 30 minutes (I prefer an hour) before serving.
