for rub: 2Tbsp black pepper, 2Tbsp white pepper, 2Tbsp green pepper, 2Tbsp pink pepper, 4 cloves minced garlic, 1/2tsp salt For balsamic sauce: 1C balsamic vinegar, 1/4C softened butter, 4tsp flour, 1C beef broth, 1/4tsp coarse black pepper, 1 boneless beef chuck roast
Heat oven 350 degrees F. combine rub ingredients, rub evenly onto beef roast. Place, fat side up, on rack in shallow baking pan. Roast 1 1/2-1 3/4 hours. Transfer roast to carving board. Let stand 15-20 min. Skim fat from drippings. Meanwhile bring vinegar to a boilin small pan. reduce to 1/4 cupMix butter and flour in small bowl; set aside. add broth, drippings, and pepper to saucepan. Gradually whisk in butter mixture until smooth. reduce heat and simmer 1 minute, stirring constantly. Keep warm. Carve roast in thin slices and serve with sauce.
