1/2 cup whole masoor lentils
4 cups water or vegetable broth
fresh vegetables such as broccoli or carrots, chopped small
Soak lentils for at least 1 hour in warm water.
Sautee onions and garlic in olive oil.
Add lentils, water or broth, spices and vegetables.
Bring to a boil. Reduce to a simmer. Simmer about 20 minutes or so until lentils are soft.
