8oz Gouda cheese, 12oz artichoke hearts, 8oz Edam, 16-18 cherry tomatoes, salt, pepper
cube cheese,set aside. Cut artichokes into 1/2" chunks. Remove stems from tomatoes and cut in half. Combine all ingredients in a bowl with salt and pepper to taste; toss well. Refrigerate 1hr or more gently stirr to blend flavors and serve at room temperature.
