fish and/or tofu or vegetables
1 cup extra fine cornmeal/Harina de Maiz
1 1/2 teaspoons baking powder
1 teaspoon pepper
1 cup water
peanut or olive oil
Combine cornmeal, baking powder, pepper and water.
If using tofu, drain, dry well with paper towels and slice into small cubes.
Lightly coat fish, tofu or vegetables with batter.
Heat oil until it sizzles with a drop of batter.
Fry in small batches until browned on both sides.
Dip in soy sauce.
