Pork loin a good sized piece.
Dijon mustard with or with out whole grain/seeds 3 teaspoons. I prefer it with the seeds.
Butter 1 1/2 tablespoons.
Rosemary 1 teaspoon.
Pepper 1/2 teaspoon.
1/3 bottle of white wine or 1/2 cup of vegetable stock.
4 of each carrots and potatoes diced into 1 inch cubes.
1 large white onion chopped.
1 sweet potatoe also diced into 1 inch cubes.
Preheat oven to 400 fahrenheit. Trim the fat off the loin though don't be too fussy about it. Mix butter, rosemary and mustard in a bowl until it make a paste. In baking dish add the potato, carrot and onion. Sprinkle pepper over and add the wine or stock. Rub the butter and mustard paste over the loin and place on top of the vegetables in baking dish. Place on middle rack and cook for 45min or until the mustard butter paste is golden brown. Test the loin by cutting into it in the middle. If still pink replace in oven for another 10min. To serve cut loin into slices and serve with vegetables and juices.
