masa harina is healthy! Here is a fast and easy recipe to make a great tasting muffin.

makes 12 muffins

1 cup masa harina

1/4 cup powdered milk

3/4 cup Non-GMO fructose ( preferably powdered)

1/8 teaspoon baking soda

1 Tablespoon baking powder

1/2 teaspoon salt

a pinch of nutmeg

Two (organic and pastured) eggs plus one egg yolk

1 1/2 cups milk

1/2 cup of honey

1/3 cup of melted coconut oil

1 Tablespoon of melted butter


Mix dry ingredients and wet ingredients separately, then combine. Pour batter into unbleached muffin liners (or muffin molds that are well coated with coconut oil) and bake at 375 degrees for approximately 15-20 minutes or until golden brown. Serve with lots of honey butter.
