1 medium cucumber, unpeeled
2 tsp sea salt
1/4 cup Cucumber Melon Balsamic
3 garlic cloves
1 1/2 cups strained plain Greek yogurt; whole milk preferably
1/4 cup extra-virgin olive oil
Grate cucumber coarsely then put in a non-metal bowl with salt and balsamicand allow to sit for 10 minutes to draw out the water. Move to a non-metal strainer (or a strainer lined with cheesecloth) and press hard a few times to squeeze out as much liquid as you can.
While the cucumbers are resting; put the yogurt in a cheesecloth lined strainer and allow to sit for 10 minutes.
Mince and crush the garlic
Add all ingredients (strained yogurt, crushed garlic, strained cucumbers) and stir well.
Serve drizzled with olive oil and garnished with mint.
