1/3C balsamic vinegar, 2tsp olive oil, 1tsp minced garlic, 1/2 medium yellow pepper chopped, 1/2 medium red pepper chopped, 1 diced eggplant, 1 small zucchini halved, 4 burgers
In a small saucepan, cook vinegar until syrupy about 5 min. Set aside. In a small bowl, stir together olive oil and garlic. Brush veggies with mixture and grill over med heat 5 min. Add burgers and eggplant grill 4-6 min more turning occasionally. Remove from grill place on buns and top with grilled veggies. Drizzle with balsamic vinegar.
