carrot ginger sauce (see carrot ginger sauce recipe)
peas or other vegetables, partially cooked if they are long cooking vegetables
coconut milk, soy milk, water or apple juice
seaweed or salt
Drain and dry tofu. Cut tofu into bite-sized cubes and bake 30-60 minutes, turning once, to dry out so it will absorb liquid.
Sautee onion and garlic in olive oil until soft.
Add carrot ginger sauce.
Add curry powder, pepper, seaweed or salt.
Add coconut milk, soy milk, water or apple juice to desired consistency.
Bring to a boil and reduce heat to a simmer.
Add vegetables. Cook until all vegetables are soft.
Add tofu. Cook about 10 minutes.
Serve over rice.
